Ingredients:
2 pheasant breasts, sliced
1 tbsp redcurrant jelly
1 red onion, chopped
1 good tbsp soy sauce
4 mushrooms or dried porcini
Approx 15 green beans per person, cut into half
2oz streaky bacon, chopped
2 eating apples, sliced
Sea salt and black pepper
2oz butter
½ tsp allspice (optional)
¼ pint cream or crème fraîche
Method:
Soften red onion in butter, add bacon and cook for three to four minutes
Add beans and cook for a further two minutes
Add pheasant, mushrooms, jelly, soy sauce and allspice, season with salt and pepper and cook for three to four minutes
Add the apple slices and cream and simmer for two to three minutes
Serve with pasta or rice or maybe a baked potato and green salad
